Potato Leak Soup

Ingredients

Butter 1 tbsp
1 large leak (whole)
1 large potato
Salt 1 tsp
Water 1L
Cream of choice 1 tbsp
Olive oil 1tbsp
Black pepper
Chives for garnish

Method

Wash and chop the leaks, peal and chop the potato.

In a large pot add butter and fry the leaks, then add the chopped potato. Add salt, once softened add water.

Let it boil for 15 minutes.

With a food processor blend until smooth.

Add the cream, garnish with some olive oil and black pepper, and finely chopped chives.

*Make it vegan - substitute butter with plant based oil (olive oil recommended), skip the cream or substitute with coconut cream.
